About KASANENI Cooking

Hi, I’m Keiko. Thank you for visiting my page!

I am so excited to share a bit different style of Japanese cooking with you.

It is called ’Kasaneni’. Kasaneni means layering and simmering. Essentially, you put layers of cut vegetables in a pot, then simmer to bring out the natural flavor. Without dashi, or fish broth, which is often described as fundamental to the Japanese cuisine, a variety of Japanese dishes are possible. Moreover, Kasaneni is not complicated at all!

 

We are a part of the great nature, so following its natural cycle - having local seasonal ingredients - is important. Traditional medical food practitioner in Japan started the Kasaneni method about 50 years ago. With this method, you can enjoy many seasonal dishes with only vegetables, or if you prefer, a little fish or meat.

The basic premise comes from Yin and yang philosophy, where the cook adds various flavors to create balance. I believe Kasaneni can become beneficial part in your life if you try it. That is why I decided to launch this class.

In the class, you will learn :

  • Japanese cooking without dashi, or fish broth

  • A technique to keep vegetables’ natural flavor

  • Basic Japanese seasonings

  • How to cut vegetables

Thank you for reading my page. I myself am not a vegetarian. Sometimes I eat fish/meat. But because of the circumstance I grew up in, my dad grew vegetables in his small garden from season to season and my mom cooked delicious meals with those, so cooking and eating vegetables is my favorite! Since I encountered this interesting Kasaneni cooking, my interest and passion towards vegetable dishes have been increasing!

I was raised in Nara, which is an ancient city next to Kyoto. As mountains and rivers were always so close to me, I enjoy hiking and river rafting in summer.

I love traveling and meeting local people as well. I have been to USA, Canada, Finland, Myanmar, Norway, South Korea, Switzerland, Sweden, Spain and Taiwan.
